De?Toren Private Cellar is a boutique, gravity-fed winery on the Polkadraai Hills, Stellenbosch, founded in the late 1990s by Emil and Sonette den Dulk.
With a scientific approach to terroir, they’ve mapped 15 distinct soil types across their 21?ha and planted the five classic Bordeaux red varietals—Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, and Petit Verdot—on carefully selected clones and rootstocks.
The cellar’s tower structure allows gravity-fed winemaking to preserve quality, producing renowned luxury Bordeaux-style blends such as Fusion V, Black Lion, Book?XVII, Diversity, and Z.
