At Colmant, we are dedicated to crafting Cap Classique wines that embody balance, refinement, and understated elegance.
Our Cap Classiques are true expressions of the diverse terroirs from which they originate — offering rich, ripe profiles while preserving a vibrant freshness and poised balance. We work exclusively with the classic champagne cultivars, Pinot Noir and Chardonnay, blending them in nearly equal parts to capture their complementary strengths.
The heart of our winemaking philosophy lies in meticulous blending. We believe the artistry of fine bubbly begins with careful selection, sourcing grapes from a range of vineyard sites, each chosen for its unique terroir characteristics. This diversity allows us to craft base wines layered with complexity, where each grape variety adds its voice to a harmonious whole.
Our Pinot Noir is gathered from five distinct vineyards spanning Franschhoek, Robertson, and Elgin, each contributing specific qualities of depth, structure, and finesse to the final blend.
Chardonnay lends brightness, vitality, and a signature elegance, along with a capacity for graceful ageing. More than half of our Chardonnay is cultivated right here on Colmant Farm, where the soil composition achieves an ideal balance of robust structure and crisp acidity. Additional parcels are sourced from the limestone-rich soils of Robertson and Bonnievale, as well as the cooler slopes of Elgin and Hemel-en-Aarde, ensuring layers of vibrancy and complexity in every bottle.
